Bigger Is Not Better
This is the most expensive misunderstanding in the trade, and it is also the easiest to check yourself with a $15 hygrometer.
What actually happens
An air conditioner does two jobs: it lowers temperature and it removes moisture. The second one only happens while the compressor is running and air is passing over a cold coil, condensing water out of it.
A unit that is too large for the house reaches the thermostat setting quickly and shuts off - sometimes after eight or ten minutes. It satisfies the temperature in short bursts and never runs long enough to pull much water out of the air. The result is a house that feels cold and clammy, with indoor relative humidity well above 60%, and in humid regions mold appearing on closet walls and behind furniture on exterior walls.

Notice that the cheapest options come first for a reason. If a contractor's answer to a humidity complaint is a larger unit, that is the one answer that reliably makes it worse.

What is a Manual J?
The industry standard load calculation. It accounts for square footage, insulation, window area and orientation, air leakage and local design temperatures, and it produces the tonnage the house actually needs. Sizing from the old unit instead simply repeats whatever mistake was made last time.
Will a smaller unit struggle on the hottest day?
A correctly sized system is designed to run nearly continuously on the hottest day of a normal year - that is the design intent, not a shortfall. Running long is how it controls humidity.
Do UV lights or air purifiers help with humidity?
No. They may help keep a coil and drain pan clean, which is worth something, but they do nothing about moisture in the living space. Treat them as maintenance, not as a solution.
